Healthier Pumpkin Cake with Chocolate Crumble (Gluten-Free)

Pumpkin season is here, and this year I wanted a pumpkin cake with a twist — chocolate. This healthier pumpkin cake is naturally gluten-free, made with almond flour and a little white rice flour, plain yogurt for moisture and warm spices, studded with dark chocolate chunks and crowned with a chocolate crumble. Perfect with your coffee. 🎃🍫

Pan: 8.5 × 4.5 in loaf pan (21 × 11 cm, 7 cm deep)

BATTER

  • 2 large eggs
  • 80 g coconut sugar or demerara
  • 120 g thick unsweetened pumpkin purée
  • 60 g plain whole-milk yogurt, unsweetened
  • 20 g light olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • 160 g fine almond flour
  • 25 g white rice flour
  • 6 g baking powder (about 1½ tsp)
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of salt
  • 70 g dark chocolate, chopped into ½-inch chunks (I used Guittard baking bars)

CHOCOLATE CRUMBLE

  • 70 g almond flour
  • 10 g white rice flour
  • 15 g unsweetened cocoa powder
  • 35 g coconut sugar or demerara
  • 30 g cold unsalted butter, cubed
  • Pinch of salt

METHOD

  1. Preheat oven to 340°F / 170°C (no fan). Grease the pan and line with parchment.
  2. Crumble: mix flours, cocoa, sugar and salt. Rub in the butter with your fingertips until clumps form. Chill.
  3. Whisk eggs and sugar for about 1 minute. Add pumpkin, yogurt, oil and vanilla.
  4. Add flours, spices, salt and baking powder. Mix until just combined.
  5. Fold in the chocolate with a spatula.
  6. Pour into the pan and top right away with the crumble. Don’t press.
  7. Bake 30–35 min, checking at 25, until a toothpick comes out clean. If the top browns too fast, tent loosely with foil.
  8. Cool completely before unmolding and slicing.

Tips

💡 To unmold: leave a parchment sling hanging over the sides and lift the cake out, or flip it onto parchment, remove the pan and flip again, crumble side up.

💡 Prefer a glass baking dish? Grease, line the bottom with parchment and serve straight from it. Start checking at 20 min.

💡 Homemade purée? Roast the pumpkin and drain it well. It must be thick.

Send this to your pumpkin-loving friend! 🎃🤎
