Cinnamon Pizzelle

If you love Italian flavors and are looking for a unique dessert, you must try these delightful Cinnamon Pizzelles. The name “Pizzelle” originates from the Italian word “pizze,” meaning “round and flat.” This cookie can vary from hard and crispy to soft and light, depending on how it’s made. Traditionally known as Italian waffle cookies, Pizzelles are perfect for any occasion and can be customized with a variety of flavors such as lemon or vanilla, and even a hint of cinnamon for a richer experience.

Ingredients:

  • 3 eggs (room temperature)
  • ¾ cup sugar
  • ½ cup melted butter (unsalted)
  • 1 ½ all-purpose flour
  • 1 tsp baking powder
  • 1 tsp grated Lemon zest
  • 2 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp salt

Instructions: 

  1. Grease and preheat a Pizzelle machine according to the manufacturer’s instructions.
  2. Whisk flour, baking powder, cinnamon and salt together. Set aside
  3. Beat eggs and sugar until light and fluffy, then add melted butter, vanilla, lemon zest.
  4. Combine the egg mixture and flour mixture together, fold until well combined.
  5. Grease and heat a Pizzelle machine according to the manufacturer’s instructions.
  6. Place about 1 tablespoon of dough on the center of each pattern (depending on the size of your pizzelle iron).
  7. Close the upper iron, lock and bake for about 1-2 minutes until gold brown
  8. Open the iron, remove the pizzelles and allow to cool on a rack.
  9. Repeat with the rest dough
Note: If you prefer, you can use ½ tsp anise seed instead of cinnamon.

      Thank you for letting me know! I’ve updated the recipe to include this. You’ll need ½ cup of melted butter—unsalted works best for this recipe.
