Pistachio Bonbons with Homemade Pistachio Paste

Ingredients:
• 2 cups of Valrhona white chocolate
• 3 tablespoons of pistachio paste (plus 2 tablespoons for filling)

Instructions:

  1. Melt the Chocolate:
    • Place the white chocolate in a bowl and melt it in the microwave. Use 30-second intervals, stirring well in between to prevent the chocolate from burning.
  2. Add the Pistachio Paste:
    • Once melted, add 3 tablespoons of your pistachio paste to the melted chocolate. Mix well until fully combined.
  3. Prepare the Mold:
    • Pour the chocolate and pistachio mixture into a bonbon mold, covering the bottom and sides. (Refer to the video for guidance.)
  4. Refrigerate:
    • Place the mold in the refrigerator for about 10 minutes to allow the chocolate to set.
  5. Filling:
    • Once the chocolate is firm, add your favorite filling (I used pistachio paste, but you can use another filling of your choice).
  6. Cover with Chocolate:
    • Cover everything with more melted white chocolate and refrigerate again until firm.
  7. Ready!
    • Now just unmold and enjoy these beautiful and delicious bonbons!
