Ingredientes:

1 ½ cups sugar

• 180g (6.3 oz) softened butter

• 3 eggs

• 3 cups flour (I used 2 cups almond flour + 1 cup rice flour)

• 2 teaspoons baking powder

• 1 teaspoon baking soda

• A pinch of salt

• ½ cup plain yogurt

• ½ cup milk

• 1 teaspoon vanilla extract or paste (optional)

• Zest of 1 lemon (optional)

• 2 cups blueberries (reserve some to decorate the tops)

• 2 tablespoons coarse sugar for sprinkling

Instructions:

1. Sift together the flours, baking powder, baking soda, and salt. Set aside.

2. In a large bowl, beat the sugar, butter, and eggs for about 2 minutes until light and creamy.

3. Add the vanilla and lemon zest, if using.

4. Mix the milk with the yogurt and add to the batter.

5. Gradually add the sifted dry ingredients and mix just until combined.

6. Turn off the mixer. Using a spatula, gently fold in the blueberries, reserving some to place on top of the muffins.

7. Fill muffin or cupcake liners, leaving about a finger’s width from the top.

8. Top each muffin with a few extra blueberries and sprinkle with coarse sugar.

9. Bake in a preheated oven at 400°F (204°C) for 5 minutes, then reduce the temperature to 350°F (180°C) and continue baking until golden and cooked through. This initial high temperature helps create a beautiful crust.

Storage Tips: These blueberry muffins can be stored in airtight container at room temperature for up to 2 days. for longer freshness, keep them in the refrigerator for up 5 days. To enjoy them warm, simply reheat in the microwave for about 10-15 seconds. They can also be frozen for up to 2 months- just wrap each muffin individually and store in a frezer-safe bag ou container.
