Chocolate Butter Cake

Ingredients for Pistachio Filling (same as Dubai chocolate)

  • ¾ cup pistachio cream
  • 1 tablespoon tahini
  • ¼ cup toasted pistachios, coarsely crushed
  • 1 ¾ kataifi (shredded phyllo dough)
  • 3 tablespoons salted butter

Ingredients for Brigadeiro:

  • 2 cans of condensed milk
  • 400 g fresh heavy cream or 2 small cartons of cream
  • 2 tablespoons cocoa powder, preferably 100% unsweetened cocoa
  • 50 g chocolate, preferably above 60% cocoa

How to Prepare the Pistachio Filling:

  1. In a bowl, combine the pistachio cream, tahini, and crushed toasted pistachios. Set aside.
  2. In a pan over medium heat, melt the butter and add the kataifi, stirring until golden brown.
  3. Let the dough cool slightly, then mix it with the reserved ingredients (pistachio cream, tahini, and pistachios).

How to Prepare the Brigadeiro:

  1. Quickly melt the chocolate in the microwave.
  2. Mix all the ingredients with a whisk or spatula until it reaches a filling consistency (you should be able to see the bottom of the pan when stirring quickly).
  3. Cover with plastic wrap and place the mixture in a bowl with some water and ice to cool it faster. Be careful not to let any water enter!

Assembly:

  1. Cut the cakes in half.
  2. Fill with pistachio cream, then add brigadeiro on top.
  3. Repeat for each cake layer.
  4. Finally, spread the brigadeiro over the entire cake and smooth it with a spatula.
  5. If desired, decorate the sides with pistachios.
