Easy Milk Bread Rolls

Ingredients:

  • 2 cups of milk + 2 tablespoons (800ml)
  • 4 ½ teaspoons dry yeast or 50g fresh yeast
  • 1 ½ teaspoons salt
  • 2 teaspoons sugar
  • 6 cups all-purpose flour (720g)
  • 3 ½ tablespoons (50g) salted butter, cut into small pieces, at room temperature

For brushing:

  • Milk with a pinch of sugar

Instructions: 

  1. Heat the milk to 37°C (98°F). Do not let it boil, just warm it slightly.
  2. Pour the milk into the stand mixer bowl and add the yeast. Stir gently to combine. Wait 10 minutes until the yeast forms a light foam.
  3. After this time, add the flour, sugar, salt, and finally, the butter. Mix with the heavy dough hook on low speed.
  4. Place the dough in a bowl, cover it, and let it rest in a dark environment for about 40–60 minutes.
  5. After resting, transfer the dough to a lightly floured surface, divide it into small pieces (as shown in the video), and shape them as desired.
  6. Allow the rolls to rise in a dark environment, such as a turned-off oven, for approximately 40 minutes.
  7. Once the rolls have risen, preheat the oven to 225°C (435°F).
  8. Brush the rolls with the sweetened milk and bake them for about 10 minutes until they are golden, including the bottoms.
