If you haven’t tried the Puba Cake, also known as cassava cake, you’re missing out on one of the hidden gems of Brazilian cuisine. Made with simple and accessible ingredients, it carries the flavor of tradition, perfect for an afternoon coffee. This cake is soft, perfectly moist, and has that unique touch that only fermented cassava dough can offer.
Ingredients:
- 5 cups (600g) of puba dough
- 2 teaspoons ground cinnamon
- 1 teaspoon (slightly heaped) ground cloves
- A pinch of salt
- 5 eggs
- 1 cup molasses (sugarcane syrup)
- 1 cup sugar
- 200g melted butter (I used salted Président butter)
- 750ml coconut milk
- 1 cup cashew nuts
Instructions:
- Mix all the ingredients together.
- Bake in a preheated oven at 230°C (446°F) for 50 minutes or until a toothpick inserted in the center comes out clean.
