The Best Cheese Flan Ever

If you’re looking for a dessert that’s both surprising and comforting, this Cheese Flan is the perfect choice! This recipe combines the creaminess of traditional flan with the bold and unique flavor of cheese, creating a culinary experience that’s both unexpected and irresistible.

Caramel Ingredients:

  • 200 gr (1 cup) sugar
  • 120g (1/2 cup) water

Cheese Flan Ingredients:

  • 4 oz(113g) cream cheese ambient temperature
  • 12 fl oz (1 can) evaporated milk
  • 14 oz (1 can) sweetened condensed milk
  • 1 teaspoon vanilla paste or extract
  • 5 eggs

Instructions:

Making the Caramel:

  1. In a saucepan over medium heat, combine the sugar and water. Stir until the sugar dissolves completely.
  2. Allow the mixture to simmer without stirring until it turns a deep amber color. This can take around 10-15 minutes.
  3. Immediately pour the caramel into the bottom of a flan mold or baking dish, swirling gently to coat the bottom evenly. Be cautious, as the caramel will be very hot.
  4. Set aside to let the caramel cool and harden.

Making the Cheese Flan:

  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine the cream cheese, evaporated milk, sweetened condensed milk, and eggs.
  3. Blend the mixture until smooth and creamy, ensuring there are no lumps of cream cheese.
  4. Pour the flan mixture over the set caramel in the flan mold.
  5. Cover the mold with aluminum foil.

Baking the Flan:

  1. Place the covered flan mold in a larger baking pan. Fill the larger pan with hot water until it reaches halfway up the sides of the mold (this creates a water bath or “bain-marie”).
  2. Carefully place the pans in the preheated oven and bake for about 60-70 minutes, or until the flan is set and a knife inserted in the center comes out clean.
  3. Remove the flan from the oven and allow it to cool slightly, still in the water bath.
  4. Once cooled, refrigerate the flan for at least 4 hours, or overnight if possible, to let it set completely.

Serving the Flan:

  1. To serve, run a knife around the edges of the flan to loosen it. Invert the flan onto a serving platter – the caramel should flow over the top, creating a beautiful sauce.
  2. Slice and enjoy your delicious cheese flan!
