Ingredients:
- 2 large eggs
- 54g (about 2 ½ tablespoons) honey
- 2 teaspoons salt
- 6 tablespoons butter, at room temperature (85g)
- 1 cup mashed sweet potato (213g)
- 2 ½ teaspoons instant yeast
- ¾ cup milk, at room temperature (170g)
- 5 cups (600g) all-purpose flour (plus 1/4 cup extra if needed for adjustment)
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger (optional)
- ¼ teaspoon freshly grated nutmeg (optional)
Instructions:
- In a large mixing bowl, combine the eggs, honey, salt, butter, mashed sweet potato, and milk. Mix until well blended.
- Add the instant yeast, flour, ground cinnamon, and, if using, ground ginger and freshly grated nutmeg.
- Knead the dough using a stand mixer with a dough hook attachment (you can also knead by hand if preferred) until it is smooth and elastic. This may take several minutes.
- If the dough remains sticky and does not form a ball, gradually add some of the extra 1/4 cup of flour until it comes together.
- Once kneaded, place the dough in a lightly greased bowl, cover it, and let it rise in a warm area until it has doubled in size, about 1 to 1.5 hours.
- After rising, gently deflate the dough and shape it according to your preference (e.g., loaves, rolls).
- Place the shaped dough into a greased baking pan (I used one with a 25 cm diameter) or onto a baking sheet lined with parchment paper. Cover and let it rise again until puffy, about 30 to 45 minutes.
- Preheat your oven to 350°F (175°C).
- Bake your sweet potato bread in the preheated oven for about 25 to 30 minutes, or until golden brown and it sounds hollow when tapped on the bottom.
- Remove from the oven and let it cool on a wire rack before slicing and serving.
