Fast and Delicious Dinner – Branzino

Enjoy the fresh and delicate flavor of Branzino, a Mediterranean Sea bass that is prized for its mild, sweet, and flaky flesh.

Ingredients:

  • 1 whole Branzino, cleaned and prepared (approximately 420g; you can also use Sea Bass)
  • Black pepper
  • White pepper, to taste
  • Salt to taste (I use about 2 teaspoons of salt)
  • Lemon juice (1 lime or ½ lemon)
  • Bell peppers of various colors (I use half of a large one)
  • 6 small colorful carrots(rainbow carrots)
  • Extra virgin olive oil, enough for drizzling
  • 2 cloves of garlic (minced)
  • Dill (to taste)
  • Scallions

Instructions: 

  1. Preheat the oven: Preheat the oven to 190°C (375°F).
  2. Prepare the fish: Clean the Branzino well and make a few diagonal cuts in the skin to help absorb the seasonings.
  3. Season: Season the fish with salt, black pepper, and lemon juice both inside and out.
  4. Assemble on the baking dish: Place the fish in a baking dish or tray. Distribute the bell pepper slices, carrots around and scallions, garlic and dill on top of the fish. If desired, add sprigs of rosemary or thyme for flavoring. Drizzle everything with a generous amount of olive oil.
  5. Cover and bake: If your dish doesn’t have a lid, cover the fish with parchment paper to prevent the top from burning during the first 20 minutes of cooking.
  6. Brown and finish: After 20 minutes, remove the parchment paper and let it brown for another 10 to 15 minutes, or until the fish reaches a minimum internal temperature of 63°C (145°F). The fish should be opaque and easily flake.
