Fluffy, Easy & Fast Blueberry Bundt Cake with Lemon Icing

Ingredients for the Cake:

  • 1 cup unsalted butter, at room temperature (226g)
  • 1 ½ cups sugar
  • 4 eggs
  • Zest of 1 lemon
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 pinch of salt
  • 1 ½ cups milk
  • ½ cup yogurt (I used Skyr, but you can use your preferred natural yogurt)
  • 2 cups blueberries

  • 1 cup powdered sugar, sifted
  • 2 to 3 tablespoons fresh lemon juice (preferably from a lemon)
  • Lemon zest (optional), for garnish

Instructions:

1. Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.

2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.

3. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest.

4. In a separate bowl, sift together the flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet mixture, alternating with milk and yogurt. Begin and end with the dry ingredients.

6. Mix until fully combined. Be carefully not to overmix

7. Gently fold in the blueberries until they are evenly distributed in the batter.

8. Pour the batter into the prepared bundt pan and smooth the top.

9. Bake for 50–60 minutes, or until a toothpick inserted into the center of the cake comes out clean.

10. Allow the cake to cool in the pan for about 10 minutes, then carefully invert it onto a wire rack to cool completely.

11. While the cake cools, prepare the lemon icing by mixing the sifted powdered sugar with the lemon juice until smooth. Add more juice for a thinner consistency if desired.

12. Once the cake is completely cool, drizzle the lemon icing over the top. Sprinkle with lemon zest (if using) for garnish.

13. Slice and serve the cake.
