Ingredients:

  • 1 medium onion
  • 4 cups water
  • 1 carrot
  • 1 leek
  • 1 fennel bulb and fronds (optional)
  • 5 cloves garlic
  • Parsley or cilantro
  • 1 tomato
  • 2 tbsp tomato paste
  • Mushrooms mix
  • 1/2 cup coconut milk
  • Olive oil
  • Salt

Instructions: 

1. Prepare the Vegetable Broth:

  • Begin by preparing a vegetable broth. Chop the onion, carrot, leek, fennel bulb (if using), garlic, parsley or cilantro, and tomato.
  • Add these vegetables to a pot along with 4 cups of water.
  • Bring to a boil, then lower the heat and let it simmer for about 30-40 minutes to extract the flavors.
  • Once done, strain the broth and set aside the liquid.

2. Prepare the Mushrooms:

  • In a large saucepan, heat some olive oil over medium heat.
  • Add minced garlic and sauté for a minute until fragrant.
  • Then, add the mushrooms (cleaned and sliced) and cook until they are browned and soft.

3. Combine the Flavors:

  • Carefully sift the prepared vegetable broth into the sautéed mushrooms, stirring as you add it.
  • Add 1/2 cup of coconut milk to the mixture.
  • Ladle in 1-2 spoonful of the vegetables reserved from preparing the broth to add more texture and flavor.

4. Blend and Finalize:

  • Using an immersion blender, blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a traditional blender, blend until smooth, and then return it to the pot.
  • Season with salt to taste and reheat as needed.

5. Garnish:

  • For a special touch, grill some dehydrated porcine mushrooms in an air fryer until crispy.
  • Use these as a garnish along with fresh cilantro before serving.
