This delectable treat is made with nourishing ingredients like coconut sugar, coconut oil, and gluten-free flour, perfectly blending the fresh taste of apples with a hint of citrus from lemon zest. It is ideal for a delightful afternoon treat or a special dessert.
Ingredients:
- 3 eggs
- 1 cup coconut sugar
- ½ cup coconut oil
- 1 cup almond flour
- ½ cup white gluten free flour
- ½ tsp baking soda
- 11/2 tsp baking powder
- 1 tsp cinnamon
- Lemon zest
- 2 apples (I used 1 green smith apple and 1 crisp apple)
- 1 apple (for decorating optional)
- 2 TBSP Apricot jam (optional)
Instructions:
- Preheat your oven: Start by preheating your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper to prevent the cake from sticking.
- Mix the wet ingredients: In a large mixing bowl, whisk together the eggs and coconut sugar until well combined and slightly fluffy. Gradually add in the melted coconut oil, mixing continuously.
- Add the dry ingredients: In a separate bowl, combine the almond flour, gluten-free flour, baking soda, and baking powder. Slowly fold this dry mixture into the wet ingredients, stirring until just combined.
- Incorporate the apples and zest: Add the lemon zest to the batter for a fresh, citrusy flavor. Then, peel and core the apples, cutting them into thin slices or small chunks. Gently fold the apple pieces into the batter, making sure they are evenly distributed.
- Prepare for baking: Pour the batter into your prepared cake pan, spreading it out evenly. If you’d like, thinly slice an additional apple to arrange on top for decoration.
- Bake the cake: Place the cake in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
