Looking for a delightful and gluten-free recipe to brighten your day? Look no further than the Nourish Apple Cake! This delectable treat is made with nourishing ingredients like coconut sugar, coconut oil, and gluten-free flour, perfectly blending the fresh taste of apples with a hint of citrus from lemon zest. It is ideal for a delightful afternoon treat or a special dessert. 

Ingredients:

  • 3 eggs
  • 1 cup coconut sugar
  • ½ cup coconut oil
  • 1 cup almond flour
  • ½ cup white gluten free flour
  • ½ tsp baking soda
  • 11/2 tsp baking powder
  • 1 tsp cinnamon
  • Lemon zest 
  • 2 apples (I used 1 green smith apple and 1 crisp apple)
  • 1 apple (for decorating optional)
  • 2 TBSP Apricot jam (optional)

Instructions:

  1. Preheat your oven: Start by preheating your oven to 350°F (175°C). Grease and line a round cake pan with parchment paper to prevent the cake from sticking.
  2. Mix the wet ingredients: In a large mixing bowl, whisk together the eggs and coconut sugar until well combined and slightly fluffy. Gradually add in the melted coconut oil, mixing continuously.
  3. Add the dry ingredients: In a separate bowl, combine the almond flour, gluten-free flour, baking soda, and baking powder. Slowly fold this dry mixture into the wet ingredients, stirring until just combined.
  4. Incorporate the apples and zest: Add the lemon zest to the batter for a fresh, citrusy flavor. Then, peel and core the apples, cutting them into thin slices or small chunks. Gently fold the apple pieces into the batter, making sure they are evenly distributed.
  5. Prepare for baking: Pour the batter into your prepared cake pan, spreading it out evenly. If you’d like, thinly slice an additional apple to arrange on top for decoration.
  6. Bake the cake: Place the cake in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Optional apricot glaze: While the cake is still warm, you can brush the top with a little apricot jam to give it a beautiful shine and enhance the flavor.
  8. Let it cool: Once done, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before serving.
