Strawberry Banana Cream

Strawberry and Banana Cream is a delicious and nutritious dessert made with fresh ingredients. It’s perfect for a special brunch or as a lighter, healthier dessert option.

Ingredients:

  • 2 tablespoons unsalted butter
  • 2 ripe bananas
  • ½ cup milk (about 250 ml)
  • 2 tablespoons cornstarch
  • 1 egg yolk
  • 1 pinch of salt
  • ½ teaspoon vanilla extract
  • 1 cup strawberries (cleaned and sliced)
  • 1 cup cold heavy cream

Instructions: 

  1. Melt the butter in a saucepan.
  2. Add the sliced bananas and cook for about 3 minutes, stirring constantly.
  3. Remove from heat and mash the bananas to make a puree.
  4. Add the milk, cornstarch, and egg yolk and return to medium-low heat. Keep stirring until it starts to boil, then turn off the heat.
  5. Stir in the vanilla extract, cover with plastic wrap touching the surface to prevent skin from forming, and cool quickly in a bowl of ice water. Set aside.
  6. Slice the strawberries and add lemon juice and sugar. Cook over medium-low heat for 15 minutes. Allow to cool and set aside.
  7. While the strawberries are cooking, whip the heavy cream to soft peaks (Keep refrigerated until ready to use).
  8. Combine the banana puree with the strawberry mixture, mixing well with a spatula. Gradually fold in the whipped cream, mixing from the outside in until well combined.
  9. Assemble in small glasses or a large dish and enjoy!
