Strawberry and Banana Cream is a delicious and nutritious dessert made with fresh ingredients. It’s perfect for a special brunch or as a lighter, healthier dessert option.
Ingredients:
- 2 tablespoons unsalted butter
- 2 ripe bananas
- ½ cup milk (about 250 ml)
- 2 tablespoons cornstarch
- 1 egg yolk
- 1 pinch of salt
- ½ teaspoon vanilla extract
- 1 cup strawberries (cleaned and sliced)
- 1 cup cold heavy cream
Instructions:
- Melt the butter in a saucepan.
- Add the sliced bananas and cook for about 3 minutes, stirring constantly.
- Remove from heat and mash the bananas to make a puree.
- Add the milk, cornstarch, and egg yolk and return to medium-low heat. Keep stirring until it starts to boil, then turn off the heat.
- Stir in the vanilla extract, cover with plastic wrap touching the surface to prevent skin from forming, and cool quickly in a bowl of ice water. Set aside.
- Slice the strawberries and add lemon juice and sugar. Cook over medium-low heat for 15 minutes. Allow to cool and set aside.
- While the strawberries are cooking, whip the heavy cream to soft peaks (Keep refrigerated until ready to use).
- Combine the banana puree with the strawberry mixture, mixing well with a spatula. Gradually fold in the whipped cream, mixing from the outside in until well combined.
- Assemble in small glasses or a large dish and enjoy!
