Ingredients:
- ½ cup (113g) of unsalted butter, softened
- ½ cup (125g) of sugar (Demerara sugar recommended)
- 2 eggs
- 1 tablespoon (21g) of honey
- 1 cup of all-purpose flour
- 1 cup of oats
- ½ teaspoon of baking powder
- ½ teaspoon of baking soda
- A pinch of salt (Pink salt recommended)
- 1 teaspoon (5 ml) of vanilla extract (Optional)
- 2 teaspoons of cinnamon (Optional)
- ½ cup of raisins (Optional)
- 1 teaspoon of grated orange zest (Optional)
Instructions:
- Preheat the oven to 350°F.
- Sift the flour with baking powder, baking soda, and salt. Set aside.
- Cream the butter and sugar until light and fluffy, using a stand mixer, handheld mixer, or spatula.
- Add the eggs one at a time, beating well after each addition. Then mix in the honey, vanilla extract, and cinnamon.
- Gently fold the flour mixture, oats, and raisins using a spatula.
- Line a baking sheet with parchment paper and shape the cookie dough into desired shapes using a cookie scoop, ensuring they are roughly the same size for even baking.
