Today, I want to share with you a recipe that embodies the essence of homesickness: a traditional Brazilian Cassava Cake. This recipe is a popular choice in Brazilian households. Its moist texture, sweet flavor, and homemade taste make it perfect for breakfast, a snack, or dessert.
Ingredients for the Caramel:
- 1 ½ cups of sugar (I used demerara)
- 2/3 cup of water
Instructions:
- Melt the sugar until it’s light golden.
- Add the water and cook until it reaches a thick syrup consistency.
- Do not stir.
- Caramelize a bundt pan with a central hole, about 24cm diameter.
- Let it cool and set aside.
Be cautious with children when working with burnt sugar.
Ingredients for the Cake Batter:
- 1kg of cassava
- 1 1/2 cups of sugar
- 180g of butter
- 5 eggs (lightly beaten)
- A pinch of salt (optional)
- 1 cup of grated coconut (preferably fresh)
Instructions:
- Mix all the ingredients with the help of a wooden spoon or spatula.
- Pour into the previously caramelized pan.
- Bake in the oven at 350°F for about 50-60 minutes.
