As springtime approaches, the spirit of renewal and celebration fills our hearts. And to make things even sweeter and healthier, I’d like to share a brownie recipe that perfectly embodies this sentiment—introducing the Gluten-Free Banana Brownie – a delicious treat that proves you can have flavor and health in one delectable bite. Designed to be enjoyed by all, this brownie combines the richness of chocolate and the natural sweetness of bananas, creating a perfect harmony of flavors that will inspire you.
Ingredients:
- 1/2 cup (113g) of softened butter
- 1/2 cup of sugar (I used demerara)
- 2 eggs
- 1 teaspoon of vanilla extract
- 2 large ripe bananas, mashed
- 1/4 cup (26g) of cocoa powder (I used 100% cocoa)
- 1 cup of flour (I used 1/2 cup almond flour and 1/2 cup rice flour)
- Pinch of salt (1/4 teaspoon)
- 1/2 teaspoon of baking powder
- 1 cup of chocolate chips (or roughly chopped chocolate)
Instructions:
- Preheat the oven to 350°F
- Line a 20x20cm (8×8 inch) or 20x13cm (8×5 inch) square or rectangular baking pan with parchment paper and set aside.
- In a mixing bowl, mash the bananas. Add sugar and mix well to combine. Then, stir in the softened butter, slightly beaten eggs with vanilla extract, cocoa powder, flour with salt and baking powder, and the chocolate chips.
- Pour the batter into the prepared baking pan and bake for 30 minutes. Allow it to cool in the pan for 15 minutes before cutting into squares and serving warm.
| Tips: 1. You can use your preferred cocoa powder. 2. You can use an oven-safe square Pyrex dish; make sure to line it with parchment paper. 3. Use your preferred flour, including 1 cup all-purpose flour (120g). 4. You can also serve it as a dessert with a scoop of vanilla ice cream and/or chocolate sauce (you can use the same sauce I’ve shared for functional carrot cake Brazilian style). |
