I have tried multiple potato bread recipes, but this one takes me back to the fond memories of baking with my grandmother. In this recipe, I made ten dinner rolls.
Ingredients:
- 2 large eggs
- 1/3 cup of sugar (67g)
- 2 teaspoons of salt
- 6 tablespoons of butter at room temperature (85g)
- 1 cup of mashed potato (213g)
- 2 ½ teaspoons of instant yeast for bread
- ¾ cup of water at room temperature (170g)
- 4 ¼ cups of all-purpose flour (510g)
Instructions:
- Mix all the ingredients in a stand mixer using the dough hook until a ball forms.
- Place the dough in a lightly oiled bowl, cover with plastic wrap or a kitchen towel, and let it rest for about 90 minutes inside a turned-off oven.
- Then, shape the dough desired, as shown in the video.
- Place the loaves on a prepared pan and let them rise for about 1 ½ to 2 hours.
- Bake in a preheated oven at 180°C for 20-25 minutes or until brown.
- Let them cool before slicing.
Tip: When making dinner rolls, placing them close together in a round pan is important.
