This recipe holds a special place in my heart as it has been a part of my childhood for as long as I can remember. It is a simple yet delicious cake with a unique texture, thanks to the orange juice and zest. I highly recommend making the orange syrup for extra moistness and flavor. My mom has used this recipe for various occasions, from simple weekend coffee to birthday celebrations with brigadeiro (a Brazilian chocolate sweet) on top. Use a 9″ round pan light greased with butter and sprinkle with flour or spray de-molded for baking. Preheat the oven to 350ºF.
Tip: All ingredients need to be at room temperature
Ingredients:
- 2 cups of sugar (200g)
- 180g of butter
- 3 eggs
- 3 cups of all-purpose flour
- 1 cup of orange juice (preference fresh)
- 1 orange zest (optional)
Instructions:
- Sift the flour, baking powder, and salt together and set aside.
- Using a whisk attachment, cream the sugar and butter together.
- Add each egg and mix very well until it becomes a light and creamy mixture
- Put the zest if you are using it to give extra flavor.
- Add half the flour with half of the juice and then the remaining flour with the remaining sugar; mix to combine.
- Put in a previously prepared pan.
- Bake at 350F for about 30-40 minutes, or until a toothpick is inserted and comes out clean.
