Ingredients for the Topping:
Prepare the Pan:
- 5 tablespoons unsalted butter
- ¾ cup demerara sugar
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- ¼ teaspoon grated cloves
- 3 peeled and pitted peaches
Instructions for the Topping:
Combine all ingredients together until the butter melts. Finally, add the peaches (as shown in the video) and set aside the prepared pan.
Ingredients for the Cake:
- 1 cup almond flour
- ½ cup gluten-free flour
- 2 teaspoons baking powder.
- 2 teaspoons grated ginger.
- 2 teaspoons ground cinnamon
- ½ teaspoon cardamom
- ¼ teaspoon grated cloves
- ¼ teaspoon salt (a pinch)
- 6 tablespoons unsalted butter (at room temperature)
- 2/3 cup sugar
- 2 tablespoons molasses
- 2 eggs
- ½ cup cow’s milk (or almond milk or any milk you prefer)
- 1 teaspoon vanilla extract
Instructions for the Cake:
- Mix all dry ingredients together, except the sugar, and set aside.
- Cream the butter, sugar, and molasses (if using) until well combined before adding the eggs one at a time. Beat until a whitish cream forms. Then add the flour mixtures with spices (you can do this in two additions, alternating with the milk to make it easier), mixing just until all ingredients are combined.
- Pour all the cake batter into the prepared pan (as shown in the video) and bake in a 180C oven for about 45 minutes.
