Heavenly Blueberry Cake That Anyone Can Make!

Today, I’d love to share this delightful blueberry cake recipe that will surely bring warmth to your heart. Blueberries are known for their antioxidant properties and health benefits. But did you know that, beyond the physical benefits, they also carry mystical energy? It is said that blueberries can be associated with healing and protection energies. And there’s more: some people believe that dreaming about blueberries signifies abundance and prosperity. So, as we prepare this cake together, we are creating something delicious to enjoy and weaving hopes and dreams for a future filled with joy and plenty.

This cake is ideal for accompanying moments of joy and celebration or simply to make an ordinary day something extraordinary. And remember, the true magic happens when we are open to it, in every little blueberry and shared smile.

Ingredients:

  • 2/3 cup of sugar
  • 56g of butter (approximately 4 tablespoons)
  • 2 eggs
  • 1 teaspoon of lemon zest
  • 1/2 teaspoon of baking powder
  • 1 cup of buttercream
  • 1 cup of all-purpose flour
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt (a pinch)
  • 1 cup of blueberries (fresh or frozen)

Instructions:

  1. Mix 1 tablespoon of lemon juice with the milk in a cup and let it sit for about 12-15 minutes.
  2. Sift all dry ingredients (except sugar) and set aside.
  3. Prepare an 8″ cake pan by greasing it with butter, dusting it with flour, or lining it with parchment paper.
  4. In a stand mixer, using the paddle attachment, cream together butter and sugar on medium speed until well combined.
  5. Add one egg at a time, beating until a pale mixture forms.
  6. Mix in the lemon zest and vanilla extract.
  7. Alternately add half of the buttermilk and half of the flour mixture, then the remaining buttermilk and flour mixture.
  8. Pour the batter into the prepared cake pan, place the blueberries on top, and sprinkle with about 2 tablespoons of demerara.
  9. Bake in a preheated oven at 350°F (180°C) for approximately 30 minutes or until a toothpick inserted comes out clean.
  10. Put the cake on the wire rack and allow the cake to cool in the pan for 10 minutes before removing.
