Hi all! Today, I am happy to share with you an incredibly flavorful recipe. This Key Lime Pie promises to create unforgettable moments around the table with your loved ones. Let us savor this delicious recipe that will delight every palate and make memories that will hopefully last a lifetime.
Serves: 1 whole 14″ tart and 2 mini-individual cups.
Ingredients for the Graham cracker crust:
- 170g Graham Cracker Crumbs
- 1/2 cup Sliced and Toasted Almonds
- 100g (1/2 cup) of Melted Butter
- 2 tablespoons of Sugar
- 1/2 cup of All-Purpose Flour
- Salt to taste
- Cinnamon to taste
Ingredients for the Key Lime Cream:
- 57g Egg Yolks
- 1 can (400g) of Condensed Milk
- 185 ml of Lemon Juice (half fresh, half concentrated)
Preparation
Mix everything with a rubber spatula.
Prepare the Crust:
- In a mixing bowl, begin by combining graham cracker crumbs, toasted almond slices, sugar, all-purpose flour, and a pinch of salt.
- Gradually drizzle the melted butter while stirring until the crumbs are evenly moistened. Then, press the mixture evenly into the bottom of a 14-inch tart pan.
- Finally, bake the crust at 350°F (180°C) for about 10 minutes or until it is slightly toasted and firm.
Prepare the Key Lime Cream:
- Mix egg yolks, condensed milk, and key lime juice in a separate bowl using a rubber spatula until well combined. Bake everything at 300°F until the cream sets.
Serving tips:
- It combines sweet and sour flavors perfectly with a smooth key lime cream and crispy crust. Add a layer of raspberry curd to make your dessert even more delicious.
- If you find it difficult to remove the pie from the pan, gently heat the bottom with a torch to help release it.
For Mini Portions:
- Start by heating up the key lime cream in the oven until it firms up. Once it has cooled down, add a few spoonfuls of the cream at the bottom of a small jar. Then, add the crackers crumb mixture to the cream and decorate it with meringue and lemon zest.
