It’s with pleasure that I share the first recipe of my blog today – a mouth-watering gingerbread loaf that’s soft, fluffy, and incredibly easy to make! This recipe is not just about baking a cake but about creating moments and memories that only a kitchen full of love can offer. Imagine the aroma of fresh apples wafting through your home, accompanied by the taste of coffee or tea, bringing comfort and coziness to your and your loved ones’ hearts.

This gingerbread loaf is perfect for all occasions, be it a quiet afternoon snack, a family gathering, or even to sweeten a casual meeting among friends. It’s a recipe meant to be shared, savored, and remembered. Each bite reminds us of the sweet and unforgettable moments we can create in the kitchen.

Ingredients

  • 113g of butter
  • 1 tablespoon of orange zest
  • 1 cup of sugar
  • 1 cup of almond flour 
  • 1/2 cup of gluten free flour
  • Apple sauce (quantity to taste)
  • Cinnamon powder, ginger powder, and clove powder (to taste)
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 2 eggs

Preparation

Dry Ingredients Preparation: In a bowl, mix the flour, baking powder, and spices (cinnamon, ginger, and clove) to taste. Set aside.

Butter and Sugar Cream: In the mixer, beat the butter with the sugar until light and fluffy.

Adding Flavors: Add the orange zest and the eggs, one at a time, beating well after each addition.

Integrating the Apple sauce: In a separate container, dissolve the baking soda in the apple syrup. Mix well and then incorporate this mixture into the batter.

Finalizing the Batter: Finally, add the reserved dry ingredients to the batter, mixing gently until everything is well integrated.

Baking the Cake: Pour the batter into a greased and floured pan (or lined with parchment paper) and bake in a preheated oven at 180°C (350°F) for approximately 35-40 minutes or until a toothpick inserted in the center comes out clean.
